Those walls are rarely flat and they are rarely worth tearing out, so the work is repair: key back what is loose, fill from behind where we can reach it, and skim to a plane that reads right without erasing the house.
The newer builds, and the additions on the back of the old ones, are the opposite job. Insulation, board, flat finish, ready for paint.
